Method
Organic Grüner Veltliner grapes grown in the löss clay soils around the village of Großriedenthal. A bit of an experiment, the juice originally intended for blending but ending up as Martin’s first orange wine. Wild ferment in open tanks, on skins for 7 days, then pressed and matured in acacia wood barrels. No fining or filtration and just a pittance of added
sulphur (10 ppm).


Tasting Notes
Zündstoff translates as an explosion and it certainly is on the nose. Like walking into a Middle Eastern souk, all exotic spice like cardamom, ginger and cloves. Ripe red apple to taste, more ginger, very dry and mineral finish.


Food Pairing
Push the boat out and try something unexpected like dry aged beef, served rare with Dijon mustard; it’s also awesome with proper biltong
